Elvis’s cooks often made this pie in large quantities. As soon as it came out of the oven, its aroma would fill the house. Elvis and members of the “Elvis Mafia” would happily pop into the kitchen for a slice of pie.
Sweet potatoes grow well around Memphis, making them an inexpensive and easily accessible ingredient for Southern families, which is why this dessert became so popular in the region.

Prepare the crust first
Mix the flour and salt, then cut in the cold margarine using a fork or knife until crumbly. Add the ice-cold water one tablespoon at a time—just enough so the dough comes together. Wrap and refrigerate immediately.
Do not knead.

For the filling

Peel the sweet potatoes, cut them into large chunks, and boil them in salted water until very soft. While still hot, drain and mash them thoroughly using a potato masher.

Add the cold butter, beaten eggs, spices, and cream. Mix everything until the filling is completely smooth.

Grease a round pie dish and line it with the dough, making sure it also covers the sides. Pour in the filling and bake at 150°C (300°F) slowly for at least 1 to 1.5 hours.
